Put a twist on Cinco de Mayo entertaining with these light Taco Tapas -- perfect for Margarita Month!
- 1 pound of lean ground turkey (or your preferred meat alternative)
- 2 tsp. chili powder
- 2 tsp. cumin
- 1 tsp. garlic salt
- 1 tsp. black pepper
- 1 tsp. paprika
- 1 tsp. Worcestershire sauce
- 1/2 tsp. Tabasco sauce
- 1/2 tsp. Dijon mustard
- 1/4 tsp. red pepper flakes
- 4 whole wheat soft tortillas
- 1 cup salsa
- 2 tomatoes, chopped
- 1 cup light sour cream (optional)
- 1 cup low-fat shredded cheese (optional)
Spray a nonstick skillet with cooking spray and put over medium heat. Place protein of choice in pan. Add all other ingredients. Sautéto warm and combine flavors. Stir and break up meat with a wooden spoon or spatula until the meat is browned. Set aside.
Meanwhile, bake tortillas as directed in oven. Set up a self-serve station with meat, tortillas and toppings. Then, let guests enjoy assembling their own tacos.
