Entertaining outdoors? Serve this Healthy Summer Slaw!
For the salad:
- 1 bag of broccoli slaw (raw shredded broccoli and carrots)
- 1 cup diced organic Fuji apple, peeled
- 2 tbsp. of dried cranberries (unsweetened)
- 1 organic kiwi, peeled and sliced
- 1 organic red bell pepper, seeded & chopped
For the dressing:
- 1 tbsp. Dijon mustard
- 5 tbsp. balsamic vinegar
- 1 tbsp. olive oil
- 1 tbsp. chia seed, ground
- Salt and freshly ground black pepper to taste
- 1 large garlic clove, finely chopped
- Fresh basil leaves
Place mustard, balsamic vinegar, oil, salt, chia seed and freshly ground black pepper into a clean, empty jar or plasticware with a lid. Add chopped garlic and fresh basil leaves. Cover jar or plasticware and shake well to blend. Set aside. Place broccoli slaw in large bowl. Add chopped apple, kiwi and pepper. Mix it all together. Top with cranberries and walnuts. Mix again. Add dressing just before serving. Makes six servings.
